Healthy Fisherman’s Pie – Recipe

Ingredients

  • 100g of smoked salmon chopped
  • Chopped into chunks, salmon & cod, 1 filet of each with bones and skin removed.
  • 1 tbsp of chopped fresh dill
  • 1/2 small chopped yellow onion
  • 1/2 can of drained corn
  • 1/2 can drained peas
  • 1 large head of cauliflower chopped
  • 1 tbsp corn starch
  • 3 tbsp olive oil
  • 150 ml of low fat milk
  • 50g of grated old cheddar cheese
  • 4 tbsps of unseasoned breadcrumbs
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375 F.
  2. You will need a deep pie dish. Lightly grease the bottom of the dish and sides.
  3. Season the fish pieces with salt and pepper, add the onions, peas and corn, toss with the chopped fresh dill and add to the dish.
  4. Chop the cauliflower and then pulse in a blender until the mixture looks like rice not mashed potatoes. Remove from the blender and combine with the breadcrumbs and cheese, season with salt and pepper to taste and stir everything together.
  5. In a pot heat up 3 tablespoons of the oil, and add the corn starch. With a whisk stir until combined and there are no lumps. Add the milk, salt and pepper to taste until it becomes a little thick.
  6. Pour the sauce over the fish, cover with the cauliflower mixture & bake in the oven for 45 minutes until the crust is nice and brown.
  7. Sprinkle with dill or chopped parsley & serve with Dijon mustard on the side.
