How to Cook Scallops with Mango Salsa Dressing

Ingredients

  • Scallops
  • 3 tablespoons Red Wine Vinegar
  • 1 tablespoon White Sugar
  • ½ small Red Onion
  • ½ mango
  • 1 red chilli
  • Zest of ½ lime
  • 1 scallion
  • Dash of hot sauce
  • Salt
  • Pepper
  • Butter
  • Olive Oil

Method

  1. Pour the vinegar into a bowl with the sugar and mix to dissolve the sugar.
  2. Chop the onion finely and add it to the bowl.
  3. Peel and chop the mango and chop it finely like the red onion and place in the bowl.
  4. Chop the chilli finely and add to the bowl.
  5. Chop the scallion and add to the bowl.
  6. Add a drop of hot sauce and mix everything together.
  7. Turn on your pan to medium heat and add butter and olive oil.
  8. Season the scallops and place in hot pan and sear for 2 minutes a side.
  9. Top with the salsa.

Serving Suggestion

Serve right away and garnish with fresh coriander. Two scallops per person. Enjoy!
