  • Butter
  • Red Chillies
  • Fresh Coriander
  • 2 Limes
  • Salt

  1. Get the butter to room temperature and place it in a mixing bowl.
  2. Finely chop the red chilies and put them in with the butter. Keep the seeds in for more heat.
  3. Chop a handful of fresh coriander and place it in with the butter.
  4. With a fine grater, grate the zest of the lime and add it to the butter.
  5. Squeeze the juice from 2 limes into the butter and add a good pinch of salt.
  6. With a spatula, mix all the ingredients together in the bowl.
  7. Lay out some butter paper and put the butter mix in the middle.
  8. With a dash of cold water, mould the butter into a sausage shape and wrap the butter paper into a tube shape.
  9. Twist both ends tight to shape the butter and place in the fridge for 20 minutes.
