How to Spatchcock a Chicken


  • Chicken (Whole)
  • Chicken scissors
  • Thyme
  • Lemon
  • Lime Leaves
  • Dijon Mustard
  • Olive Oil
  • Salt & Pepper
  • Paprika
  • Rosemary


  1. Turn the chicken over so that the breast is on the bottom.
  2. Cut on both sides of the chicken to remove the spine.
  3. Break the wish bone at the top to release.
  4. Turn the chicken over and push down to flatten.
  5. Break the thyme and put into a bowel.
  6. Put the lime leaves in as well.
  7. Put the thyme in the bowel.
  8. Put the olive oil and salt & pepper into the mixture.
  9. Put the rosemary in and mix all ingredients till combined.
  10. Coat the paste onto the chicken and massage into the skin.
  11. Place the lemons onto the rack with the chicken.
  12. Put into an oven for 45 minutes on 400 degrees f.
  13. Once out of the oven squeeze the lemons down over the chicken.

Serving Suggestion

Serve on a pretty board or platter with your favorite side dish. Enjoy!
