Seafood Pad Thai – Better Than Takeout!

Ingredients

  • Canned Tuna
  • Pad Thai Noodles
  • Green Sweet Peas
  • Fresh Dill
  • Green Chili
  • Coriander
  • Asparagus
  • Dijon mustard
  • Parmesan Cheese
  • Lemon Juice
  • Salt
  • Soy Sauce
  • White Pepper
  • Extra Virgin Oil

Method

  1. Soak the noodles in warm water for 4 minutes to soften.
  2. Add to the boiling water with a little salt.
  3. Chop the vegetables and herbs into bite size pieces.
  4. Add some mustard to a bowel.
  5. Add the lemon juice to the bowel.
  6. Add the salt.
  7. Add the soy sauce.
  8. Add the white pepper.
  9. Add extra virgin oil.
  10. Mix everything together.
  11. Strain the noodles and add to the sauce.
  12. Add the tuna.
  13. Add the vegetables and herbs and toss.
  14. Add the cheese.

Serving Suggestion

Serve for a nice healthy lunch or dinner. Enjoy!
